Fresh Tomato Basil Chicken Pasta (With Quick Homemade Noodles)

A cozy winter plate that tastes like summer with vine tomatoes, basil, garlic, red wine, and parmesan.

Ingredients

Quick Homemade Noodles

  • 1 egg
  • 3/4 teaspoon kosher salt
  • 1 teaspoon water (plus a tiny splash more if needed)
  • About 1 cup all purpose flour total

Chicken and Tomato Basil Sauce

  • 1 chicken breast, butterflied
  • Kosher salt and black pepper
  • 1 to 2 tablespoons olive oil
  • Vine ripened tomatoes, chopped into big chunks
  • 3 cloves garlic, minced
  • Fresh basil (stems minced, leaves added at the end)
  • A splash of red wine
  • Parmesan cheese, for topping

For Serving

  • Demi baguette, sliced
  • Balsamic vinegar
  • Olive oil
  • Optional: a glass of Italian red wine
  • Optional dessert: chocolate cake

Instructions

  1. Let the wine breathe.
    Open your Italian red wine first and let it breathe while you cook.
  2. Make the noodle dough.
    In a bowl, whisk 1 egg with 3/4 teaspoon kosher salt and about 1 teaspoon water. Add 1 to 2 tablespoons flour and whisk smooth like pancake batter. Add the rest of the flour (about 1 cup total) and mix into a dough. If it feels dry, add a tiny splash of water. Let it rest while you prep the sauce.
  3. Boil the noodle water.
    Bring a pot of water to a boil and salt it generously.
  4. Butterfly and season the chicken.
    Butterfly the chicken breast so it cooks evenly. Season both sides with salt and freshly ground black pepper.
  5. Sear the chicken.
    Heat 1 to 2 tablespoons olive oil in a pan. Sear the chicken until browned and mostly cooked through. Remove and rest. If the center is slightly under, that is fine because it finishes in the sauce.
  6. Build the tomato basil sauce.
    In the same pan with the chicken juices and oil, add minced garlic and minced basil stems for just a few seconds. Immediately add the chunky tomatoes so the garlic does not burn. Season with salt and pepper, then add a splash of red wine. Simmer briefly so tomatoes soften but stay chunky. Add basil leaves at the end.
  7. Roll and cut the noodles.
    Flour the counter and roll the dough into a thin sheet. Fold or roll it loosely, then slice into noodles.
  8. Cook noodles fast.
    Drop noodles into boiling water for 1 to 2 minutes. Transfer straight into the tomato sauce (a little pasta water is fine).
  9. Toss with chicken and finish.
    Cube the chicken and add it back into the pan. Toss everything together until glossy and hot. Plate and cover generously with parmesan.
  10. Serve with dunking bread.
    Slice a demi baguette and dunk into olive oil and balsamic vinegar on the side.

Limited ingredients, maximum flavor. Fresh tomatoes, basil, garlic, red wine, and parmesan come together fast, and the homemade noodles cook in minutes.
